It’s a delicate dance, balancing the art of storytelling with the practical demands of running a successful business. But Gilly’s team, which includes co-owner Nephthaly Leonidas and bar lead Yvonne TK, navigates this challenge with a deft touch.

They take regular “elixir sabbaticals,” stepping away from the menu for a couple of weeks to recharge and feel out the next season. And when it comes to social media and digital engagement, they’re constantly exploring new ways to share their emotional narratives with the world.

“The only way you are really going to be able to meet the needs for a community is to first know what those needs are,” Daniel says. “My goal isn’t to have 100 different Gillys around the world,” Daniel says. “It would be great to be able to share these stories with more and more people, but I have other ways I’m hoping to do that, and it doesn’t require me to open 10 stores in LA and 10 more in Chicago.”

It’s a refreshing perspective in an industry that’s often driven by expansion and growth at all costs. And as Gilly prepares to open their second location in Atlanta’s Castlebury Hill neighborhood, I can’t wait to see how they’ll continue to rewrite the rulebook and inspire the next generation of coffee visionaries.
